A Taste of the Philippines: Adobo Pork

Filipino adobo is a classic method for marinating cuts of meat or fish in the Philippines. This type of cooking was named by the Spanish — adobo is the Spanish word for “marinade.” Traditional adobo recipes call for meat to be marinated and stewed in a spicy, flavorful mixture of vinegar, soy sauce and spices (garlic, bay leaf and black pepper). This recipe for adobo pork uses coconut milk to mellow out the strong flavor of the dish. The pork will still be plenty hot; reduce the amount of pepper if you are sensitive to spicy foods.

Along with its rich taste, adobo pork is also rich in nutrients. Pork is a good source of dietary protein, vitamins and minerals, while coconut milk is full of fatty acids that raise levels of HDL cholesterol (“good” cholesterol) in the blood.

  • Protein: 24 grams

  • 1 ½ tablespoon coconut oil
  • ½ medium onion, sliced
  • 1 teaspoon minced garlic
  • 8 ounces pork tenderloin, cut into bite-sized pieces
  • ½ tablespoon pepper
  • ½ tablespoon white vinegar
  • 1 bay leaf
  • 1 cup unsweetened coconut milk
  • 1 tablespoon toasted unsweetened coconut flakes


  1. Heat the coconut oil in a large saucepan on the stove over medium heat.
  2. Add the onion and garlic to the oil and cook, stirring frequently, until they begin to brown (approximately 5 minutes).
  3. Add the pork into the saucepan. Season the mixture with pepper and cook until the pork begins to brown (approximately 5 minutes).
  4. Stir the vinegar, bay leaf and coconut milk into the saucepan.
  5. Bring the mixture to a simmer and stir frequently until the pork is cooked all the way through (approximately 20 minutes). A meat thermometer should show an internal temperature of 145 degrees Fahrenheit when the pork is done.
  6. Remove the saucepan from the heat, plate 2 dishes with pork, sprinkle each dish with toasted coconut and serve.
