Eggs with avocado and fresh berries

It’s commonly believed that breakfast is the most important meal of the day, and this is particularly true for lung disease patients. To help you get your day started off right, the Lung Health Institute offers this recipe for eggs with a side of avocado and fresh berries. Both the eggs and avocado offer you a great boost of healthy fats to start your day, and the eggs also bring a large serving of protein to the party.
In addition, the fresh berries provide you with vitamins and antioxidants that are crucial for lung health, including vitamin C, vitamin K, potassium and others. In this recipe, we’ve left the type of berries up to you, but you may want to consider rotating through selections such as blueberries, raspberries and blackberries to keep your taste buds interested.

Protein: 28 grams
Fat: 19 grams
Carbs: 14 grams


  • 3 eggs
  • 1/2 cup fresh berries
  • 1 teaspoon olive oil*
  • Salt and pepper
  • 1/4 avocado


  1. Beat eggs in a large bowl with a whisk or fork.
  2. Wash and drain berries.
  3. Cut avocado into slices.
  4. Heat 1 teaspoon of olive oil in an 8- or 10-inch pan.
  5. Pour beaten eggs into heated pan and cook thoroughly.
  6. Slice washed berries into bite-sized pieces if necessary.
  7. Place eggs on plate with the fresh berries and sliced avocado and serve immediately.

*NOTE: Bellucci Premium Extra Virgin Olive Oil is a good option to purchase. Make sure to store the oil in a cool, dry place.
